The work on the 2026 vintage continues in the vats, where several interventions help guide the transformation of the grapes into w**e.
Among them, pigeage, or punch-down, involves pushing the cap of grape skins back down into the w**e. As the skins rise to the surface, they are brought back into movement at the heart of the vat and kept in contact with the juice.
This intervention helps ensure an even distribution of the solid matter and allows the w**e to circulate regularly through the marc.
A precise gesture, repeated according to the needs of each vat.
