For generations, the family-run Agour cheese dairy has carried on Basque culinary traditions
Made from the milk of a local breed of sheep, PDO Ossau Iraty is a true gem among
Basque cheeses, aged on a wooden board to reveal its full character and mildness.

Three aging periods, three gustative experiences:
🔸 4 months:
A tender texture and a mild flavor, with a light aroma of hay and mountain flowers, enhanced
by a delicate hint of caramel.
🔸 6 months:
A rich and creamy texture, with the perfect balance between character and elegance.
🔸 Grand Affinage (9 to 10 months):
An exceptional cheese with a complex and flavorful aromatic profile ✨
