A little different from our usual designs… and we are obsessed 💕

This Charlotte style cake is wrapped with tiramisu fingers and filled with layers of gluten-free key lime & coconut sponge, homemade tart raspberry coulis, and fresh mascarpone cream 🥥🍋‍🟩

Finished with fresh raspberries on top for the perfect balance of creamy, citrusy, and tart flavours.
Light, fresh, and full of summer energy ☀️

Not every slice is picture perfect… and that’s okay.
We almost didn’t post this, but it’s actually the perfect example of why patience matters.

If you are cutting triangle slices, always wait until your cake is fully at room temperature. In this case, the sponge hadn’t softened yet, which is why the slice didn’t come out as clean as it could have. This was a small 6 inch cake, sliced 2 hours out of the fridge… and we were in a hurry to film the slice whilst there was still daylight😅

Still just as delicious though 💕

Note: Not suitable for coeliacs due to being made in a kitchen that handles gluten
