🍷 Meet the Winemaker 🍷

Last insight we had the pleasure of attending the first in a while meet the winemaker dinner with the McGinty group and Coterie with The Lane Vineyard

The five course menu was beautifully prepared and presented and every course was executed perfectly, with a particular highlight for me being the mushroom ravioli with beurre noisette and crispy sage, the filling was rich, perfectly balanced, of good consistency and texture and all sealed up in handmade pasta, and who doesn’t love the combo of beurre noisette and crispy sage?!

However, it’s safe to say every course was of the same high standard, and I could have eaten a whole plate of the fondant potatoes swimming in a bath of that luscious red wine jus! 🤤

I knew I was going to enjoy the food given Ross Boyd is now heading up the kitchen Coterie and I’m looking to forward to enjoying more of Ross’s food here.

Onto the wine, and again we were already big The Lane Vineyard fans and it was great to listen to Jared talk so passionately about his sublime wines. Lots of great examples of the restraint and balance that Jared spoke of being so important for him to show in these wines, and the Chardonnay and Pinot Noir were exactly that.

The wines of the night for me were the Pinot Gris, Chardonnay and Pinot Noir and at the price points, I found these wines to be of great value and brilliant bang for your buck.

It would be amiss of me not to mention, it felt odd attending such an event without the presence of the legend that is Gordon Davidson but it was lovely to catch up with Ailsa McCallum who is doing a grand job of looking after all our C&B wine needs.

Thanks to all involved in putting on such a fabulous dinner and evening, and here’s to many more! 🤞

🦀 Crab dishes 🦀

A couple of weeks ago, we nipped down to Stonehaven to pick up some beautiful crab meat from the lovely trailer on the pier.

Next stop was to go and pick some final wild garlic of the season at Fetternear, before returning home to get my cook on.

I had been desperate to try this Crab & Wild Garlic Enchiladas recipe from .belfrage and what a treat it was! A colourful, inviting plate of food that tasted even better, the salsa verde served with it was the perfect accompaniment in the sun. This was another incredible recipe from Ixta, and one il definitely be repeating.

We did however, start off with a little style crab butter with dill oil as a starter with the leftover crab meat, and scooped it all up with some ciabatta.

A delicious crabby dinner, and the perfect alfresco dishes.

🦆 Crispy Duck, Watercress and Mooli Salad 🦆

With the leftover duck legs from the Peking duck J made a couple of weeks ago, I whizzed up a crispy duck salad for a quick Monday night dinner.

It was the perfect way to use up leftovers and made a great summer nights tea, and one we’d definitely make again.

I started by making my take on a homemade hoisin sauce but lightened up a bit, and a salad dressing made up of soy, white balsamic, ginger, garlic and tiny touch of sesame oil. The fragrant coriander finished the salad off nicely, along with some finely sliced chilli.

The perfect Saturday night spent at my sister’s, eating far too much sushi and drinking the best champagne cocktails 🍣🥂

I took along some fresh real wasabi I ordered from and a couple of bottles of sake, while my sister mixed up my all-time favourite cocktail - the Rivoli 75. If it contains yuzu, I’m interested.

Our Yorokobi feast included:

Sake no tartar
Spicy tuna tartar
Edamame
Chicken Karaage x 2
Veg gyoza
Tuna set - tuna and avocado maki, tuna maki (spicy sauce on the side), tuna sashimi and nigiri
Warm set - soft shell crab maki, prawn tempura maki, crispy salmon skin maki (one of our favs)
Tuna maki
Crunch roll
Deep fried tuna roll
Tamago nigiri
Ama-ebi nigiri
Grilled salmon nigiri x 2

remains my favourite takeaway by a country mile. Great food, great drinks and even better company. The perfect way to spend a Saturday night. 🥰

🔥Peking Duck🔥

After a couple of visits to this week we finally had everything we needed to make Peking duck at home 🦆🔥

J scorched the skin with maltose and Chinese red vinegar, placed the marinade inside the duck, before hanging it in the fridge for a couple of days to properly dry out the skin, he then cooked it on the new last night.

Crispy bits of skin, juicy duck, homemade hoisin, pancakes, cucumber and spring onion. For a first attempt we were really happy with how it turned out.

Some highlights from another food filled weekend just passed:

- Shaoxing Pork Belly & Hoisin Roujamo .rooted_uk
- Honey Chilli Chicken Roujamo .rooted_uk
- Salt & Pepper Mushrooms with the most addictive fried chicken sauce .rooted_uk
- Gnocchi, Italian sausage, aubergine and sage dish
- Mara canapés
- Family lunch on Saturday
- BBQ Swordfish with peppercorn sauce (after picking up swordfish from on Saturday)
- Sunday morning dog walk round Fetternear and I had to try my hardest not to stop Dan’s for dumplings on the way back
- Celebrating adorable Vivienne’s 2nd Birthday on Sunday and the big kids leaving with their party bags, cake and quavers 🙈 after we’d been fed to the gunnels with all the snacks and homemade macaroni and chicken curry

Just some of the delicious new dishes on latest menu, which just changed this week, along with a couple of today’s specials 😋.

- Roasted Hake – Cauliflower – Truffle – Chicken Butter
- Semi Smoked Salmon – Cucumber – Apple – Lemon – Blinis
- SPECIAL - Ross’s famous smoked chicken with beetroot, and savoury waffle (IYKYK - obsessed in all its guises and combinations over the years)
- Gnocchi – Italian Sausage – Aubergine – Sage
- SPECIAL - Venison Haunch Pithivier with basil emulsion (it’s been a wee while since we have had a Pithivier from Ross, so as soon as they mentioned that as a special, it was a given)

- Salted Caramel – Blackberry – Brandy Snap

Another faultless visit, and safe to say the new menu is an absolute hit!

🍜 Weeknight Ramen 🍜

Tonight’s quick midweek dinner was a tasty ramen with the broth made using as the base, miso, soy, ginger, garlic, spring onion and a touch of .sauce oat shoyu for extra umami. Topped with edamame beans, soy marinated boiled egg (not too jammy for me 🤢) and a crispy skin salmon fillet.

Filling, comforting, packed full of flavour and goodness with the help of the bone broth.
