Cooking has always been a passion and especially BBQ in all its wondrous forms. Discovering sauces & grilled meats all over the continent changed our world and we hope to bring the same tantalising flavours to your taste buds! Our hot sauces capture the tastes of grilled food, street food and smoke house BBQ restaurants throughout the Americas. We got fed up of the usual hot sauces sold in the UK
and decided enough was enough! And we made our own brand. Initially we looked at making one sauce but couldn't decide which one was best, so we ended up with six... we hope you choose your favourite!

THROWBACK!
Way back near the beginning of the story, before Meat Co Lab and Rub ME! The year was 2016.
Pitboss was invited to go to the American Royal with Brian Smith and cook with a team called Pig Riggin.
Enthusiastic he was but full of knowledge in competition BBQ he was not! 🤣
This year Team Pig Riggin received their 20 year award from the American Royal this year and sent us through a sheet we’d signed back in 2016!

RECIPE: Thai Larb Lettuce Cups 🇹🇭🥗 Here's everything you'll need to make this absolute wee beauty! 😍 - 500g pork mince - 3 tbsp sesame oil - 2 Limes [juiced] - 2 tbsp A&O Rub You Long Time Thai Seasoning - 2 Tbsp fish sauce - 4 spring onions [chopped] - ½ bunch coriander - Small bunch mint-leaves - 2 Little gem lettuces - Fresh red chillies [chopped] - Roasted peanuts METHOD: Mix together 2 tbsp of the sesame oil, lime juice, A&O Thai seasoning and fish sauce. Set this broth aside. Heat the remaining oil in a wok or pan over a medium heat. Add mince pork, breaking it up with a wooden spoon, fry for 5-6 mins or until golden brown. Stir through the spicy broth and fry for 1-2 mins. Mix through half the spring onions and half the coriander + mint. Arrange the lettuce, add the pork mince mixture and drizzle over the spicy dressing. Finish with the remaining herbs, fresh chilli and a dusting of the A&O rub! Enjoy 😎

🗣 "She's Got Eyes Like Chicken Thighs" Axl Rose 🍗 speaking of which, here's a super TASTY Honey Chilli recipe 😋 Honey Chilli Thighs With Roasted Lime & Pak Choi 🍯🌶 INGREDIENTS: - Bone in, skin on chicken thighs (1kg) - 4 limes - Pak Choi - 30g roasted peanuts (optional) - A&O Honey Chilli Rub 1 tbs, plus extra for glaze - Runny honey 1tbs - Fresh chilli - Coriander, half a bunch, chopped - Sesame seeds METHOD: Preheat oven to 185°c Prepare the chicken thighs by patting dry and trimming off any excess skin/fat. Coat in 1tbs of A&O Honey Chilli and set aside. Half limes, wash and prep pak choi. On a baking tray add the chicken + limes and place in oven for 10 mins. Meanwhile in a separate bowl add honey, lime juice from 1 lime + extra A&O Honey Chilli rub and mix well to form a glaze. After 10 mins add pak choi to the roasting tin and return to oven for a further 10mins. Glaze the chicken with the honey chilli lime glaze, turn up oven to 220°c to crisp and brown off that lovely skin. Chicken is safe to eat once it reaches an internal temperature of 75°C. Remove from oven and plate up. Glaze the chicken once more and garnish with a little extra rub, sesame seeds, chopped coriander, roasted peanuts and fresh chopped chilli. Before each bite, squeeze some of roasted lime over the sticky, thighs - absolutely lush! 😁😊
