Every year I wonder which mushroom will make it into my first (fresh) wild mushroom dish of the year. Strong contenders include chanterelles, blushers and orange birch boletes. This year it was this orange birch bolete which I found a good week ago now!

I usually celebrate the start of the season with mushrooms on sourdough toast, but I was in the mood for something decidedly less gentrified and more down to earth - fried egg and mushroom roll, tarted up with my hawthorn ketchup and wild cherry hot sauce. Divine 😋😋😋

A cautionary note - if this is your first time eating this species then try a small piece very well cooked to begin with. It’s a sneaky one which causes tummy upsets in a very small minority. Oh, and make sure you’ve identified it accurately too!

🌺 My first go at summer rolls - how did I do?? 🌺

I’ve seen a few foragers over the years using flowers in summer rolls and it always looks so stunning, I’ve wanted to try it for ages. Next time I’d roll them tighter (was scared to rip them!) and I might go fully veggie so the flowers can be star of the show.

Flowers used: sweet rocket blossoms; dandelion; cornflower; Japanese rose; forget-me-nots!

Other ingredients: rice summer roll wrappers; rice noodles; prawns; cucumber, carrot, coriander, mint, lettuce - and an umami soy and peanut sauce for dipping!

A weekend at home, mostly in the garden. And .townsend5 18th birthday party meaning I’m now mum to two grown adults 🤯

A few snaps from the last few days.

1 & 2: beautiful crab apple blossom
3: Baby cucumbers, courgettes and squashes

5: fairy ring champignons fruiting on my lawn
6 & 7: wild cherry blossom for syrup

So it’s wild garlic season - one of my absolute favourites! Whilst I’m still waiting for things to get going here in Aberdeenshire, I know that there’s plenty already popping up for some of you especially those who are further south in the UK. Here are some ideas for how you might want to use well garlic, though the possibilities are endless (well not quite endless, you might not want to use it in any desserts 😂).

Let me know if you’d like to see the recipe for any of these, and I might just put out a recipe for the most popular one.

I’ve not posted for a while since I’ve been struggling to find anything positive or encouraging to say, particularly to those of us in Aberdeenshire who are experiencing the darkest winter since records began in 1957, so we’re told. It turns out that my mental wellbeing is more closely connected to the weather than I realised. Partly as I have a deep connection with nature and the outdoors, and partly thanks to having a lifestyle that means I HAVE to spend time outside - particularly when it comes to caring for animals.

Still, there have been some moments of joy to give me some buoyancy. They can be summed up under three themes - nature, food and community 🧡 isn’t that what life is all about?

Here’s to the signs from nature that no matter how dark it feels (in our own lives and globally), light will return. If the chickens are laying eggs again, it must be true 😉

Here are a few ideas of edibles you can find now in the UK, and what you might like to do with them. Though if the weather with you is anything like it is here, you might have to push yourself to get outside! 💦💦

As always safety first - always be 100% sure of your identification before foraging and consuming any plant, mushroom or seaweed.
