The Dalmore Highland Single Malt Scotch Whisky. In 1263 a member of the Mackenzie clan saved King Alexander III from a charging stag.

This single act of bravery was rewarded with the gift of the royal stag emblem for use as the Mackenzie clan crest. The Clan Mackenzie owned The Dalmore Distillery for over a century and its defining influence is still evident to this day, with the iconic royal stag antlers standing proudly on every bottle of The Dalmore.

The Dalmore Aged 17 Years marks a new chapter in the exploration of Sherry cask maturation, and is now available to purchase in the USA.

Finished in a trilogy of rare and exclusive Sherry casks sourced through our century-long partnership with González Byass, this is a Highland Single Malt made to push boundaries.

The first new expression to join our Principal Collection since 2022, The Dalmore Aged 17 Years is the oldest in our collection to showcase the enriching influence of three exclusive Sherry casks - Amoroso, Apostoles, and Matusalem. Each imparts its own distinctive layer of richness and nuance, creating a velvety, full-bodied profile that offers a decadent evolution of our house style.

Opening with an aroma of Seville orange, ripe orchard fruit, and wood spice, the palate reveals notes of poached pears, forest berries, and sweet toffee, before a long finish of dark chocolate orange, rich dried fruit and hints of cinnamon and nutmeg.

The art of complex multi-cask maturation.

At The Dalmore, the artistry of multi-cask maturation lies in understanding the different ways in which wood can influence the character of our robust spirit.

Our whisky makers initially mature our spirit in American white oak to build depth and richness before transferring it into rare Sherry, Port or wine casks for a finishing period, imbuing the whisky with new layers of flavour and aroma.

These rare casks are sourced from the world’s most prestigious bodegas and wineries including González Byass, Graham’s Port and Château Mont-Redon, through close and long-standing partnerships. Each cask is chosen with intent: to enhance, contrast or complement our signature citrus, chocolate and soft spice character.

At our reimagined distillery, guests can see these precious casks vividly brought to life in deconstructed form within our Maturation Corridor - a space to explore multi-cask maturation and take a deeper dive into our exclusive cask partnerships.

The washbacks – the foundation of our spirit.

The Mash & Tun Room of The Dalmore’s reimagined distillery sees the first step in the creation of our Highland Single Malt whisky. It’s here that our nine huge Oregon pine washbacks work for around 50 hours, transforming wort into wash to create alcohol and the initial flavours of our spirit.

Chosen with intent, these wooden washbacks are much harder to maintain than modern stainless steel but their influence on fermentation quietly shapes the character of our spirit, a difference that can be traced all the way to the whisky in the glass.

From the lily pad viewing platform, our guests can take in the full height and immense scale of these towering vessels, while the warm, malty aroma of fermentation – rich in biscuity notes - rises gently up through the air: the quiet alchemy of our whisky-making unfolding in real time.

The Kiln Room – the meeting of old and new.

At our reimagined distillery, you’ll discover the Kiln Room, an imposing yet inviting triple-height space crowned by the distillery’s original pagoda roof.

The Kiln Room was once at the heart of the distillery’s malting process, but now in a meeting between old and new, the area has been thoughtfully repurposed into a warm and atmospheric space, where contemporary design elements, lighting and rich textures sit in quiet complement to the building’s nineteenth-century stonework.

Here, guests will sample pure water drawn from nearby Loch Morie, a vital element in the making of The Dalmore Single Malt Highland whisky, before ascending the grand staircase to begin a rare, behind-the-scenes tour of our reimagined distillery.

To celebrate the recent launch of The Dalmore Aged 17 Years, friends of The Dalmore came together for a storied lunch at Michelin-starred Sabor in the heart of London's Mayfair.

The event, honouring the exploration of the sherried flavours of The Dalmore Aged 17 Years, offered a perfect pairing with the traditional Spanish cuisine, including Black Trompette croquetas, diver-caught scallops and a Segovian suckling pig, expertly prepared by acclaimed chef Nieves Barragán Mohacho.

Guests were treated to a guided tasting of The Dalmore Aged 17 Years, showcasing the rich flavours of Seville orange, orchard fruit and wood spice and immersed in the stories behind each dish in a truly memorable celebration of flavour and artistry.
