Taste can take us straight back to early memories that we'd totally forgotten about!

People often describe one of our honeys as "how honey used to taste"—bringing back memories of their family's, uncles, or grandparents' hives.

Sometimes the best honeys aren't the ones with the most unusual flavours, but the ones that help us remember.

I started something new this month: developing a flavour scale.

I've been organizing all the honeys we've had over the last 3 years by strength of flavour. None of them are as strong as a Chestnut honey for example, or so mild that they are simply 'sweet'. All of them have flavour notes that are more layered and fun to try.

The scale I'm developing is all relative, with 'medium' in the middle.

Medium strength = where to start
Milder = delicate, smooth, gentle
Stronger = bold, personality-filled, unforgettable

Pro tip: Start with a medium honey, then explore. You'll quickly discover which suits your palate.

All of them are raw. All of them are extraordinary. None are boring.

I stole this idea at RHS Sandringham.

Every place setting had a glass filled with flowers next to it - it's so simple and made the table look amazing.

I know it was Royal - inspired by the King and Queen's love of nature and sustainable - but surely it's easy to do?

Next time I have people over I'm going to try it and pick anything I can find in the garden or hedges!

This might be our favourite review ever.

A 10-year-old at RHS Sandringham tasted Tom's honey and said to his mum:

"We NEED that one. It's the BEST honey on Planet Earth."

They bought a jar. Obviously!

This one's wild!

A beekeeper came to visit our stall at RHS Sandringham and told me about the time he got stung by a bee on the end of his nose - must have hurt like mad!.

His wife treated it with a salve she made from plantain leaves and it worked a treat.

I had no idea plantain could do this:

- Naturally anti-inflammatory
- An antihistamine
- Growing in your garden right now (it's a "w**d")

Crush the leaf. The green sap is what you need and then rub it on. Or make it into creams and salves too.

Wasp sting? Here's a memory trick from Chris one of our beekeepers:

Say "wasp" in a German accent.

"Vasp" = Vinegar

Reach for vinegar, not bicarbonate - that's for Bees.

(And yes, that's genuinely how to remember which is which!)

Both start with B... Bee sting = Bicarbonate

Bicarbonate is the stuff that makes cakes rise. Make a paste and put it straight on the sting.

I love this review - and it's true, so often I'm told by people how our honeys remind them of relatives who used to keep bees and feed them honey! It's lovely to think how the tastes and smells of our honeys are taking people back to memories of family and home.

Crystalising is a natural process as it's the glucose in the honey knitting together. Every nectar is different, with those with a lower glucose content crystalising more slowly. The nectar from horse chestnut flowers and brambles would be good examples of ones that crystalise slowly.

Flowers that produce nectar with a higher glucose content include oilseed r**e, dandelion and ivy which will crystalise faster.

It's the interplay of all these nectars in the honeys that the bees make that determine how slowly (or fast) it'll crystalise.
