𝗔𝗳𝘁𝗲𝗿 𝗰𝗼𝘃𝗲𝗿𝗶𝗻𝗴, 𝘁𝗵𝗲 𝗿𝗲𝗮𝗹 𝘄𝗼𝗿𝗸 𝗯𝗲𝗴𝗶𝗻𝘀!

Covering quickly is important, everyone knows that. But why exactly? 🤔
⠀
In the first 24 hours after covering, the plants and micro-organisms (bacteria, moulds and yeasts) use up the last of the oxygen in the clamp. In doing so, they convert sugars into CO₂, water and heat.
⠀
▶️ Oxygen remains longer = more energy loss and heating
⠀
Only once the oxygen is nearly gone do the lactic acid bacteria take over. They convert the remaining sugars into lactic acid, which lowers the pH. This inhibits undesirable bacteria, such as butyric acid bacteria. If those do get the chance, they break down proteins and sugars and produce butyric acid.

▶️ Oxygen remains longer = greater risk of butyric acid = lower feed value and intake
⠀
Yeasts and moulds do not disappear during preservation. Without oxygen they are barely active, but the longer oxygen remains in the clamp, the more time they have to grow. If they get in contact with oxygen again, for example during feed out, they can quickly become active again. That increases the risk of heating and mould.

▶️ Oxygen remains longer = more yeast growth = greater risk of heating at feed out
⠀
