Shropshire Blue with a touch of Mexican fusion…. In a proper filthy burger…. Oh go on then….
80/20 British ground beef patties, dusted with Picante Chile De Arbol … onto the grill, sauté onions, topped with Shropshire Blue & Mature Cheddar…. Loaded into toasted Demi Brioche, Romaine Lettuce and finished with the absolute classic Cholula Hot Sauce……. The takedown was messy …. But very satisfying !

Who else digs a hot chicken and sticky rib combo ?
Chicken thighs coated , fried and tossed in a warmed up hot sauce and chilli jam glaze combo…. into a toasted brioche with gems, cheese slice , fried red onions and capped with more chilli jam on the lid….
Baby backs cut, coated and fried until crispy …. meanwhile prep your glaze… BBq Sauce, Hot Sauce and Chilli Jam blend together and warm up…. Instant sticky glaze… ribs added , tossed and finished with a few sesame seeds…. Now for the takedown …. Simple stuff big on flavour !!
Play around with your sauces and have a bit of food fun….

Well the weather improved today, sunshine and warmth though how long will that last ?

Reminded me of my road-trip to Greece last year twice and the fantastic fresh simple food on hand. Though we ate some excellent local dishes in Methoni and Plaka, there was one that I’ve wanted to recreate for a while. So today was the day, looking at a bunch of lemons in my kitchen… and potatoes in the fridge…. Yep… Greek Lemon potatoes with chicken…..
Fired up the Weber Mastertouch ready for indirect grilling, held the temp at 220c… prep’d the ingredients, added all into a deep baking tray, combined the marinade and straight into the BBQ. Lid down, and then the occasional temp probe.
Simply finished the dish with an olive, feta , tomato salad along with fresh oregano, thyme and thyme flowers from my herb garden…. Those potatoes though, some crispy and some soft….Absolutely done !
Really easy to make and only a handful of ingredients , if you want the recipe send a dm, I’d gladly share….. no nonsense bbq’in !!

I’ve not made a vegetable chilli in a long long time, so today that changed.
been on the tools all day, was only right I knock up a hearty full on vegetable chilli, she makes a banging vegetarian lasagna which converted me …. I didn’t go back to a protein version … so the favour returned !
The weather today seemed like it was autumn… hence the Dutch Oven … into the Mastertouch using the GBS. Just the right kick of heat, sweetness and full of flavour….cheeky nachos, charred limes, avocado and sour cream with chives from the garden… and to be fair it isn’t a bad thing to have a couple of vegetarian dishes during the week… apparently this one hit hard and I’m grateful for that.

Square Pie on a Saturday.. why not hey…. Crispy mozzarella walls , sliced springs, Nduja, fresh chopped chives and a good helping of hot sauce…. What’s not to love !

I made the dough using the Gozney premix add water only because I like the simplicity of that…. Then pre-baked my fresh dough once proved in the square pan… in the ArcXL for that lighter open crumb, let it cool for 15 mins, flipped and loaded… this can definitely come again and again… finishing it off with Tom’s pizza hot sauce….

A tidy combo, simple, full of flavour with a kick…

Meatloaf Burgaa… Double Cheese Melt, Double Smoked Streaky Bacon, Hot Sauce Egg, sweetness from the glaze & a simple Brioche…. Done !!

Managed to make sometime today to work through some recipe creation… 5 done.. and this was the 6th using leftover meatloaf from BH. Hot sauce in eggs on the griddle is an absolute game changer.. will be on the revisit list again.

Sometimes the simple stuff hits hard… and this did… with plenty of napkins !

Used my Weber Slate for today, I have the smallest out of the fleet… it packs a punch for sure…

Irish Champ with a side of fiery pickle and cedarwood smoked meatloaf…. The simple stuff is always the best. Tarragon, garlic, sea salt, black pepper, a couple of eggs, panko , onions, minced beef and pork and a good helping of Worcester…. Combined into a loaf shape …on the board into the Searwood 300f till internal hits 155f using the new Weber Probe and Grate Smart sensor through the Weber connect app.
3 bouts of glazing at different stages with a tommie / bbq sauce … bark formed… rest for 20mins…. Moist, flavourful and cuts like a hot knife through butter…. Clean…

I have left overs for a week … !!!!

Adapted slightly…. Absolutely worked a treat…. If you haven’t already experienced an Irish spice bag…. You need this…
Quick turnaround on the Weber Slate at high heat, Steak, Sliced Peppers, Garlic and Shallots…. Skin on Fries cooked then added to the griddle…. Toss Turn , into a bowl…. magic Spice Dust blend added and plenty of it…. Toss it again… I didn’t have a bag… so I made one… foil lined too 😉… stack it up , finished with red chilli and chopped coriander (optional but I had to use up some I had from a previous cook (broke tradition again) never mind)… not forgetting a curry sauce of your choice…. Chinese… Katsu… Chipper…. pour it over… sit back and enjoy… done !
