CHEESE AND WINE PAIRING OF THE MONTH 🧀🍷
This month we’re travelling to Northern Italy for the perfect pairing - Valpolicella Classico and Ubriaco Rosso!
Valpolicella Classico is a traditional red wine from the heart of the Valpolicella region in Veneto, Northern Italy. Crafted primarily from Corvina, Rondinella, and Molinara grapes, it offers bright aromas of sour cherry, red currant, and wild herbs, with subtle notes of almond and spice. Fresh acidity, soft tannins, and elegant structure make it a wonderfully food-friendly wine and an excellent match for Umbriaco Rosso.
Ubriaco Rosso also has its origins in the Vento region. Legend states that the technique dates back to WW1, when local farmers needed to hide their wheels of cheese from the Austro-Hungarian soldiers. Their favourite method was to submerge the cheese inside barrels containing red wine and pomace. When the wheels were retrieved the cheeses had completely transformed in both appearance and flavour. The resulting cheese has a purple/violet exterior and a pale ivory interior, with a firm crystalline bite.
