This arrived in our inbox last week from customer Mike Hullis, and it really made our day. 💚

"I received my first shipment of oil some weeks ago and gave a bottle away to a friend. We had a heatwave here at the end of last month and I have been eating salads drenched in your amazing olive oil every day.

However, I ran out before my next shipment arrived and stupidly bought some olive oil from a well known high street supermarket.

Big mistake. It was bland, tasteless and everything you say on your website.

I have learnt my lesson, (and will be more circumspect with my largess in the future).

Occasionally something enters one's life which enhances and extends one's enjoyment of life, your artisan olive oil has certainly achieved that for me."

Meet Paco – one of the small farmers behind every bottle of Ético. 🫒

Paco and his family have been farming olives in the Subbética mountains for generations, harvesting each olive by hand using nets, poles and mechanical shakers – the traditional methods this part of Andalucía has always known.

Like most small farmers here, Paco couldn't easily find customers willing to pay a fair price for his carefully grown olives. So his harvest would end up at the local mill, mixed in with olives from farms that don't share his standards, before being sold on to large buyers or shipped to Italy to be blended with inferior oils.

We pay Paco more than the market price for his oil, keeping his oil traceable and unblended. He was the first farmer to commit to Ético, and we're very glad he did. 💚

It's National Salad Week, and we think a great salad deserves much better than a supermarket dressing. This one – charred courgettes, spiced chickpeas, pistachio dressing and crumbled feta – is a reminder of what a good extra virgin olive oil can do. Works as a main or a generous side.

GRIDDLED COURGETTE & CHICKPEA SALAD 🥗

INGREDIENTS (serves 4, or 6 as a side) • 3–4 large courgettes • 2 tbsp Ético early harvest extra virgin olive oil • 1 scant tbsp ground cumin • 400g chickpeas (tin or jar), drained and rinsed • 2 tbsp lemon juice • 1 small tomato, finely chopped • ½ small red onion, finely chopped • 30g coriander, chopped • 100g feta cheese, crumbled

PISTACHIO DRESSING • 1 tbsp red or white wine vinegar • 1 small clove garlic, peeled • 15g shelled pistachios • 2½ tbsp Ético olive oil • ½ tsp coarsely ground black pepper • 1 tsp honey

METHOD
🔥 Griddle the courgettes – heat a griddle pan. Slice the courgettes thinly, no more than 5mm thick. Drizzle with olive oil and griddle in batches for around 3 minutes each side, until nicely charred. Transfer to a plate as you go.

🌿 Make the salsa – gently toast the cumin in a dry frying pan until aromatic. Tip into a bowl with the chickpeas, lemon juice, tomato and red onion. Season to taste.

🫒 Blend the dressing – blitz all the dressing ingredients with 2 tablespoons of water using a stick blender or pestle and mortar. Adjust the seasoning and vinegar to taste.

🍽️ Assemble – arrange the courgettes on a large plate, slightly overlapping. Drizzle with the dressing. Toss the coriander through the chickpea salsa and scatter over the top, along with the crumbled feta.

The olive oil does two things here. It chars the courgettes beautifully on the griddle, and it forms the base of the dressing – grassy, a little peppery, and the thing that ties it all together. A small taste of Andalucía in a summer salad. 💚

There should be something to it – a bit of freshness, a slight bitterness, sometimes even a peppery finish.

British asparagus season is one of the best things about late spring, and it's short – so make the most of it. 🌱

It doesn't need a lot. Roast it for crispy tips and a caramelised, nutty bite, or griddle it – our favourite – where the heat brings out a sweet, smoky crunch as the natural sugars come through.

Either way, finish with a generous drizzle of Ético early harvest extra virgin olive oil and a pinch of sea salt. Delicious! 💚

If you want to take it a little further, this is one of our favourite recipes right now.

Fresh asparagus with soft goat's cheese, sun-dried tomatoes, jamon serrano and pine nuts, dressed with Ético, fresh lemon juice, a touch of mustard and honey, salt and pepper to taste.

Cook the asparagus for 3–4 minutes until just tender – a little longer for thicker spears. Arrange on a plate, add the rest and dress generously. Enjoy! 🫒
