‘Nduja Pesto and Sausage Orzo🤤🌶️

The ‘Nduja sausage is famous for its intense flavour – some people say it’s similar to Spanish Chorizo, but we think it’s even hotter.

*RECIPE INSTRUCTIONS*
Ingredients list:
* 2 tbsp olive oil
* 4 pork sausages – skins removed
* 1 small onion, finely diced
* 2 garlic cloves, crushed
* 180g orzo
* 500ml chicken stock
* 4 tbsp ‘Nduja Pesto
* 50ml double cream
* 40g parmesan grated
* Handful of torn fresh basil
* Black pepper
Instructions:
1. Remove the skin off each sausage.
2. Heat the olive oil in a large frying pan over a medium-high heat. Add the sausages, breaking them up with a spoon, and cook for 5-6 minutes until browned.
3. Add the onion and cook for another 4-5 minutes until softened. Stir in the garlic and cook for 1 minute.
4. Add the orzo and stir for 1 minute to lightly toast it.
5. Pour in the chicken stock and bring to a gentle simmer. Cook for 10-12 minutes, stirring regularly, until the orzo is tender and most of the stock has been absorbed.
6. Stir through the ‘Nduja Pesto until fully combined. Add the double cream and parmesan, stirring until the sauce is glossy and creamy.
7. Season with black pepper and serve in a bowl topped with parmesan, fresh basil and an extra spoonful of ‘Nduja Pesto in the centre.
