A little thank you to Belfast after celebrating my first ever Fleadh Cheoil na hÉireann ❤️

As a Filipino-Canadian who moved to Northern Ireland 8 years ago, last week really solidified why I truly love living here. Last week was filled with so much music, dancing and unmatched energy that blurred all lines. It was quite surreal to experience and Belfast truly deserved this. This is what the world should always take away from Northern Ireland. What a magical week.

Congratulations to all the organisers and also, the volunteers and that 10/10 clean up crew!

and as always, a massive thank you to everyone for a fantastic, record breaking week at KUBO x y'all came thru!!

We are joining the festivities and created an Irish inspired Kamayan feast! Best of both worlds.

Salt & chilli chips
Garlic scallion mayo
Spicy vinegar

And taking Document Belfast suggestion ages ago, we battered a sausage. specifically, homemade garlicky langonisa sausage.

If you’ve been with us since the beginning, you know our Filipino Pork BBQ has been on the KUBO menu since day one. and honestly? It’s never going anywhere.

In the Philippines, BBQ is practically its own food group!! We make our own pineapple ketchup from scratch for that perfect sticky glaze, and serve ours exactly how it should be: with a little pot of s**a (spiced vinegar) on the side.
