A lot of love, care and attention goes into the soil at our farm - and right now, we’re reaping the rewards.

Our tomatoes have been incredible this summer: resilient plants producing intensely sweet, flavour-packed fruit, grown just a few miles from the restaurant.

They’re the heart of our panzanella - a simple summer salad that really lets them do the talking.

For the first in our chef interview series, we sat down with to talk about his time with the Fat Duck Group, the chefs who have influenced him and the experiences that have shaped the way we cook at Wild.

Matt talks about the importance of bringing together people with different backgrounds, ideas and approaches, and how that collective experience helps us create something that feels uniquely our own.

He also wanted to give a special mention to Simon King and Jocky Petrie, both of whom played an important role in his journey and whose support and guidance have stayed with him throughout his career.

Next up, we’ll be sitting down with Charlie, our head chef, to hear more about the kitchens he’s worked in and the chefs who have influenced him along the way.
