What does MSC certified mean?

MSC stands for Marine Stewardship Council. The blue MSC label means that a fishery has been independently assessed against internationally recognised standards for sustainable fishing.

It helps ensure fish stocks are well managed, the marine environment is protected, and fishing practices are responsibly monitored.

A little something for the weekend.

Our lobster tails are up to £20 off all weekend. A rather good excuse to make dinner feel a little more special.

And, as it happens, yesterday was National Lobster Day, a day established to recognise the long-standing importance of lobster to coastal communities and the people who work in the industry.

What does blast frozen actually mean?

It means fish is frozen very quickly at an extremely low temperature.

The faster fish freezes, the smaller the ice crystals that form inside it. Smaller ice crystals mean less damage to the texture, helping the fish retain more of its natural quality.

At Tom the Fish, we blast freeze our fish at origin, shortly after it’s caught or prepared.

So when it reaches your freezer, it’s already been frozen at its best.
