A recent conversation with a customer made us realise that not everyone knows what goes into producing truly exceptional beef. Breed is only part of the story – here are four other factors that make a real difference.
🌿 Time
Our Dexter and Longhorn cattle mature slowly on grass, spending close to 30 months on pasture. This slower growth allows fat to develop naturally, creating the marbling that gives beef its flavour and tenderness. Like a well-aged wh**ky or a fine w**e, time matters. Commercial cattle can be as early as 13-14months, they are often pushed intensively with cereals to produce a big carcass early and are often yields beef that is considerably leaner than ours. We also keep our cattle on pasture as much as seasonal conditions allow, they graze a diverse grass ward including herbal leys.
🐄 Low-Stress Handling
Animal welfare is at the heart of what we do. We use a small private abattoir where cattle are handled calmly and efficiently, minimising stress. Not only is this the right thing to do, it also has a significant impact on the eating quality of the meat.
🥩 Hanging
We dry-age our beef for 25-28 days, which we believe is the perfect balance of tenderness and flavour. Many supermarket cuts are hung for far less time (maybe only a week or two) because they don’t have the fat cover needed for longer ageing.
🔪 Skilled Butchery
The final step is craftsmanship. Our butcher’s skill and attention to detail ensure every cut is prepared to the highest standard. Just as an artist brings a painting to life, an experienced butcher brings out the very best in each carcass.
