Tender Braised Beef Short Ribs in a Hearty Gravy
Ingredients:
4 pounds beef short ribs
Salt and black pepper to taste
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup red wine
2 tablespoons tomato paste
1 teaspoon dried thyme
2 bay leaves
2 tablespoons all-purpose flour
2 tablespoons cold water
Directions:
Season the short ribs with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the ribs and sear on all sides until browned. Transfer to a slow cooker.
In the same skillet, add the onion and garlic, and sauté until softened. Add the beef broth, red wine, tomato paste, thyme, and bay leaves. Bring to a simmer, then pour over the ribs in the slow cooker.
Cover and cook on low for 8 hours or until the meat is tender and falls off the bone.
Remove the ribs and bay leaves from the slow cooker. In a small bowl, mix the flour and water until smooth. Stir into the cooking liquid. Set the slow cooker to high and cook, uncovered, for 15 minutes or until the gravy thickens.
Serve the ribs with thickened gravy.
