Another post, with some tasty plant-based junk food delights 😄

Tonight it's a Linda McCartney pulled pork burger with Violife smoky cheddar slice and onion rings on an OMV brioche bap with Sauce Shop cherry bourbon BBQ sauce, along with some chunky chips with Nando's vegan perinaise and chip salt.

100% vegan and absolutely fu***ng delicious.

Ok, first foray into the world of king oyster mushrooms for me (thanks to my friend Ellie for sourcing and buying these), an ardently anti-mushroom guy, and actually it was pretty damn good. I've seen a lot of very exciting uses for these bad boys, particularly as vegan alternatives to things like scallops, bacon, and chicken drumsticks, and I've had 'chicken' burgers made from them before that were amaaaaaaaaazing, so I was keen to give it a go.

I kept it very simple, just to get a feel for the materials (I have another king that I might get more adventurous with), and pan-fried them in some vegan butter with salt, pepper, garlic granules and paprika before chucking in some leftover tofu scramble I had from the other day, and cleaned up the pan with a flour tortilla before serving.

The taste was great, obviously a lot of flavour was being carried by the seasoning, but that very earthy 'mushroomness' that I dislike about mushrooms was present but not overpowering like it normally is they complimented each other well. The texture was firm and chunky and not a trace of that dreadful sliminess that I find vile that you get with most fungus. This non-mushroom eater was very impressed. Pretty basic, but as a quick and easy meal I would definitely eat that again.

The boy (for whom, like so many of his age, the word mushroom is a by-word for horribleness) hovered around the plate for scraps in his usual manner (he is *actually* fed, btw, although you'd never believe it the way he vultures around my food) and was equally impressed and expresses his approval.

Life is full of trite and meaningless phrases and that's fine, its just how language works, but every now and again you find a great example of a phrase fulfilling its actual function and it reinvigorates that phrase beyond its tired overuse. A common one you might find when reading food reviews is the phrase "hidden gem", which can mean anything from a food kiosk down a back alley in the Outer Hebrides to "not McDonald's" depending on the source....
