It can be daunting coming into a butchers if you dont know what you're after, All the lovely meat set out and not in packets. We can weigh it out for you and show you how to buy. We have all you could need & truth be told we’re here to help! 👍

For perfect pork cracklin’ my method has never failed. Here it is:
1a. Turn the oven on to the highest setting.
1b. Make sure the rind is perfectly dry and well scored (it doesn’t matter what shapes you make as long as it’s scored well).
2. Rub in generous amounts of table salt. Allow 5 minutes for reaction time.
3. Rub in some high smoke point oil (avocado oil is my oil of choice) leave for a further 2-3 minutes or longer if you can.
4. Grind on some rock salt. Don’t go too mad with it, just a few twists or sprinkles will suffice.
5. Place on a foil lined baking tray. And do not cover. It’s going to be roasted “open”
6. Bang it in the oven on the highest temperature for a minimum of 10 minutes, 20 minutes if you can. Then turn the oven down and cook the joint for the required amount of time for whatever particular cut you have.
7. For the last 20 minutes of cooking time put the temperature back up as high as you can.
8. You’ll have a beautiful cooked joint of pork with absolutely the best cracklin’ you’ve ever had.
9. Call the oven cleaning company 😉😂
