It is like for a couple of seconds they forgot everything and just enjoy the moment. I learned this art when I was fifteen years of age,at my family's butcher in Robledo de Chavela, Madrid, Spain. I spent quiet a wile there before my life went totally another path for which I am grateful like I am for this skill of charcuterie in the Iberian way.
