Picanha is Brazil’s national steak. We reckon it should be Britain’s 🇧🇷🥩

Fat cap on top, rump underneath. That cap is everything — score it in a crosshatch, salt heavy, and when it hits the cast iron it renders down and bastes the whole steak as it cooks.

Cut it 3cm thick. Fat-side down first — 2 mins to blister that cap. Flip, 2–3 mins. Rest 5. That’s it.

Slice across the grain. Probably the simplest impressive cook on the block 🔥
