Wellness Wednesday 🌿

I’m wondering how long these salads are going to keep appealing to me now we’re stepping into September! 😂🥗

Instead of a roast this week, I made a shepherd’s pie 🥧 a half potato topping for the husband and carrot and parsnip for mine (which would have been swede, but as always, I’m using up what I already have!).

I did add a little potato to mine too and it’s so easy to serve with whatever vegetables you have in the fridge. This week I just happened to have more carrots, asparagus & broccoli.
It’s all about making it work with what you’ve got, no waste, no fuss.

The protein puddings were actually pretty good and an easy way to add a little extra protein. I thought I’d give them a whirl as they were on offer.

My very kind cousin Emma also brought me some huge gorgeous tangerines 🍊 as well as two lovely plump figs.
She’s given me a really simple recipe to try with them, which I’m going to make and share with you next week.

Couldn’t resist whipping up my fathers favourite flavour on his birthday to enjoy with a coffee later☕️🤎 and play some country music 🎶 🤠
