Grilled peaches are a winner! Pat them dry - then lightly oil before grilling in a blistering hot skillet pan. Summer - on a pizza ๐Ÿ‘โ˜€๏ธ

- Porchetta Toscana
- Peaches
- Sh*take mushrooms
- Walnuts
- Rocket
- Hot honey
- Fior di latte
- Pizza sauce

Did they reinvent pepperoni? - Iโ€™d say yes!
Using the meat as a crumble allows you to experience flavour in every single bite. Sweet smoky delicious that renders out across the entire pizza ๐Ÿ˜‹

Dips Episode 7: Blue Cheese ๐Ÿง€
Ingredients
* 45g creamy blue cheese (like Gorgonzola Dolce or Saint Agur)
* 35g full-fat crรจme fraรฎche
* 20g cream cheese
* 1 small roasted garlic clove
* 1 tsp lemon juice
* 1 tsp good olive oil
* 1 tsp hot honey
* pinch black pepper
Extra tip: after the garnish, finish with a good drizzle of olive oil ๐Ÿซ’

Pizza sauce, fior di latte mozzarella, emmental, brisket, mushrooms, onions, rocket, gherkin relish, mustard ๐Ÿ˜‹

The beef brisket and Emmental actually came as a meal kit from Tesco (a combination I would not have thought of unless Iโ€™d seen it on the shelf). This one worked really well, and I would say it even deserves a place on my pizza menu (if I ever open a restaurant ๐Ÿ˜‹)

Which Pizza are You Choosing?

PS when Iโ€™m using my carbon baking steel for multiple pizzas, the grill plays a key part in recharging the heat between bakes. It takes a bit of practice and a keen eye on the oven / thermostat - but itโ€™s totally possible for consistent results โ™จ๏ธ๐Ÿ•[steel in bio]

Iโ€™m loving these half pizza / half calzone combos at the moment - it feels like youโ€™ve ordered twice at a restaurant! The calzone half is simply garlic bread with a little cheese and on the other side is Ventricina salami with mixed chilies - so tasty!

As with most of my bakes, this is my usual dough recipe of 65% hydration for a 24h rt ferment (itโ€™s in my highlights).

Dips Episode 6: BBQ Mayo ๐Ÿ—
Ingredients
โ€ข 80ml mayonnaise
โ€ข 30ml BBQ sauce (your favorite)
โ€ข 10ml ketchup
โ€ข 5ml Dijon mustard (optional, adds a slight tang)
โ€ข 1-2ml lemon juice or apple cider vinegar
โ€ข Pinch of garlic powder
โ€ข Pinch of smoked paprika (optional, but great for depth)
โ€ข Black pepper to tase

This was amazing with pizza crust, but would be great with chicken, chips, or even on a hotdog ๐Ÿ˜‹
