1st retreat cooking job of spring in the beautiful Welsh valleys. Kicking of with a dinner of miso aubergines, coconut rice, pickled carrot salad and sesame roasted broccoli. Dessert was miso caramelised banana crumble with cardamom custard.

Big Veggie Sunday lunch today with….
* quinoa and pomegranate salad
* sweet potato wedges with tahini dressing,
* green beans pan fried in garlic chilli and black olives
* oven baked mushrooms with pickle, blue cheese and chopped nuts
* grated courgette, mint and feta salad
* pan fried spring greens with lemon juice and spices
* roasted vegetables
* steamed veg
* extra crispy roast potatoes
I love all the colours you can get off a plate with veggie food 🌈🥕🥒🍅 mushrooms
