The first thing I ever posted to this account was my first sourdough loaf back in Jan 2019. Since then I've baked a bit here and there (mostly flatbreads nowadays) but it dwindled with a change to my working pattern and the price of electricity going up meaning we now, like many, mostly use the air fryer (am I right?).

My brother's-GF's-mother recently gave me some starter to get me back on my feet (thank you Karen!) and despite it almost dying after I abandoned it during a Summer holiday I have managed to bring it back to life feeding it fortnightly with dark rye.

With the clocks going back I put that extra hour to good use and whacked the oven on and baked the loaf, I then made the most of that heat and cooked a roast dinner and some extra pumpkin to prep for the week ahead.

The thing I enjoyed most was how much my boy loved it ❀️

I used dark rye to feed the starter (continuing this fortnightly)
Dark rye for the sponge (b**a?) which I left for 12-18 hours
Then strong white flour for the loaf dough.

Wild garlic, basil and cashew pesto

I've made all sorts with wild garlic over the years but you just can't beat a good homemade pesto in my opinion, good olive oil, fresh ingredients and a nice zing of lemon. Freezes well too.

We went to COR for my birthday this week and it was so, so good. The food was excellent, the drinks were great, the staff were lovely as was the weather that day and they had the windows up so it felt very open and relaxing β˜€οΈ

Favourite dishes for me were the savoury canelé filled with goats curd in thyme brown butter and the fior di latte gelato with arbequina olive oil - I could drink that oil all day long 🀀

I've had the office lurgy this week so after a day of rest yesterday I'm doing the next best thing and am out in the sunshine doing some gardening, what a gorgeous day for it β˜€οΈ

It's kombucha making time again. Kicking myself for just sharing a pic last time I brewed, must remember to note the amounts, as I use this account as my scrap book to refer back to at times.

This brew was for 2 litres
X4 organic matcha green tea bags
1800ml water
120g sugar

It's Winter and the house is cold so after one week the scoby was still not floating and I moved it to the shelf above our radiator, our room temp never gets to the optimal 21Β° so this took two weeks for the scoby to float.

I've split here and added juice of one lemon plus a few slices of ginger to one jar to second ferment for probably another week in this cold, to fizz up before I bottle and refrigerate.

Scoby is in the remaining tea which I plan to add to another 2 ltrs to get it going before adding some raspberries.

The Noma book has a coffee recipe in which I've been meaning to try, I reckon that would be brill in a tiramisu! Next year I want to grow some lemon verbena for tea and kombucha 🌱
