Double-mashed, double-centrifuged, triple dry-hopped DIPA.

Nelson Sauvin™, Nectaron®, Krush®, Amarillo® & Citra®

APPLICATION
Pour slowly, paying particular attention to the thick body & fluffy head. Swirl the glass & take in floral aromas of yellow nectarine, bursting pink grapefruit & dank fresh buds. Starting with small sips you’ll notice an intense tropical flavour, gradually increase the amount applied to unlock a sweeter character full of overripe clementine & peregrine peach.

One can of PVA is usually sufficient but in some cases a second is advisable.

Like exactly why this one hits so right.

Late last year we had the pleasure of visiting Judit and Michael’s stunning brewery in the countryside north of Girona. It was an absolute pleasure to return the favour and host Dos Kiwis here in Bristol, sharing beers and ideas to land on this one.

I Like Not Knowing is a modern West Coast IPA. A lean 100% Pilsner malt base lets Simcoe, Krush, Rakau & Motueka do the talking; sweet herbs, ripe fig & a sharp citrus finish.

HIDDEN VOLUMES 📖

An 8% New England DIPA brewed in collaboration with

Earlier this year, and by pure coincidence, both breweries selected identical lots of Mosaic & Simcoe (Coleman Farm, Oregon) and Nectaron & Nelson Sauvin (Mac Hops, NZ). From there, the recipe books opened, and the chapters diverged. The result is two distinct 8% DIPAs that explore the wildly different consequences our brewing choices can have.

Our half of the story, ‘Hidden Volumes’, lands today on the webshop. It’s a big, bright, hoppy DIPA designed to showcase the delicious vibrancy of these select lots.

Across the hallway, Verdant have crafted their own interpretation: ‘The Doorway Effect’. Go check it out, it’s available on their webshop now.
