What Youβll Need:
π₯© 1 Pork Loin Joint (adjust size to suit your guests)
π« 3 tbsp olive oil
π§ 4 cloves garlic, minced
π± 2 tsp dried thyme
πΏ 2 tsp dried rosemary
π§ Salt and pepper to taste
π― 2 tbsp runny honey
Instructions:
1οΈβ£ Preheat oven to 200Β°C (180Β°C fan)
2οΈβ£ Rub pork loin with olive oil, garlic, thyme, rosemary, salt, and pepper, ensuring itβs well coated
3οΈβ£ Place pork in a roasting tin, fat side up, and roast for 20 minutes per 500g, plus an additional 20 minutes
4οΈβ£ About 15 minutes before the end of cooking, drizzle the honey over the pork and return it to the oven for a beautifully caramelized glaze
5οΈβ£ Once cooked, rest the pork for at least 10 minutes before slicing to ensure it stays juicy and tender.
