Back to where it started for me today🔪

My journey into butchery actually started in an abbatoir. But it’s where I learnt the trade from the field to the fork 👌🏼
From 4:00 am starts to long days, it taught me respect for the trade, attention to detail, and the importance of doing things properly.

That experience shaped the way I work today, and it’s something I carry with me every day behind the counter.

Proper butchery isn’t just a job to me it’s a trade I’m proud of. 🐮🐑🐷

All this amazing produce off the farm I work at will make its way across Worcestershire and as far as the Cotswolds to supply butcher shops, farm shops, schools, cafes and the wonderful people of the midlands.

That’s why we are number 🥇

I’ve been over to Warwick to cut up and pack a beast for a good friend of ours Mr Hadley.🤝

Rob has won multiple awards for his cattle and today I can see why.🐮🥇

Bone and roll a shoulder of pork ready for the counter👌🏼

Forget the fancy cuts… this is where the flavour is. Proper pork shoulder, loaded with marbling and rind that turns into crackling worth arguing over at the table🔥

Roast it low and slow, or cook it until it falls apart and makes the best pulled pork you’ve ever had. 🐷

Some of the finest beef in the West Midlands on the block today🐮

The côte de bœuf’s in the first photo are real show stoppers🥩

Cut from the rib, left on the bone for flavour🦴
Thick, well-marbled and made for sharing (or not… i won’t judge) 🫣

Salt it, sear it , finish it in the oven serve it rare and let it rest for minimum 15 minutes⏲️
this is beef at its absolute best

Secondly is this unbelievable sirloin still on the bone👌🏼
Hung for 28 days 🗓️ and will be on the counter for Friday morning for some of the best steaks money can buy🔥
