A good sauce might be the star of the showโ€ฆ but it canโ€™t do all the work on its own.

What really takes a dish from good to that was really good is marinating the meat first. Thatโ€™s where the flavour actually gets in โ€” not just sitting on top.

Even if weโ€™re short on time, a quick chicken marinade makes a difference. Salt, pepper, garlic powder, a bit of chicken seasoning and whatever herbs are in the cupboard โ€” nothing fancy, just giving it a proper wee head start.

If youโ€™re feeling a bit more adventurous, here are a couple of our bexbox marinades to try ๐Ÿ‘‡

Hawaii chicken
Soy sauce, ketchup, brown sugar, pineapple juice, vinegar, garlic, minced ginger and sesame oil

Greek chicken souvlaki
Greek yogurt, salt and pepper, paprika, olive oil, lemon juice, rosemary, oregano and garlic

I used to think I didnโ€™t like certain foodsโ€ฆ turns out, I just hadnโ€™t tasted them done properly.

Freshness and good quality ingredients make such a difference too. Think about fruit on holiday โ€” juicy, sweet, full of flavour. Then compare that to what we sometimes get at home.

And vegetablesโ€ฆ years of boiling them into submission has given them a really bad name. But when theyโ€™re cooked right, theyโ€™re not something you โ€œhave to eatโ€โ€ฆ theyโ€™re something you actually enjoy. And that makes eating well so much easier to stick to.

People often say to me, โ€œI really like your broccoliโ€ or โ€œmy kids will only eat your broccoliโ€ โ€” and that says it all really.

Hereโ€™s a quick video showing how to cook broccoli so itโ€™s full of flavour, still has a bit of bite, and tastes properly good.๐Ÿ‘‡
