Cheddar and burgers are a classic combination. This veggie twist on a favourite brings together sweet carrots, warming spices and our Extra Mature Cheddar for plenty of rich, savoury flavour.

There are lots of things that make our Cheddar that little bit better, starting with the rich milk and our secret family recipe. But we’re also devoted to ageing our cheese in wooden boxes, the traditional way. As well as helping those flavours develop, they’re natural, sustainable and incredibly durable. In fact, we think some of the ones we’re using are almost 50 years old!

One of the secret things that makes Wyke cheddar, Wyke is its characterful crunch.

Known as “cheese diamonds” (or more scientifically, calcium lactate) these naturally occurring crystals develop during the long maturation process, a true mark of proper ageing, craftsmanship and doing things properly. Smooth, savoury and rounded with that signature salty crunch, our cheddar is unmistakably Wyke.

As well as making England’s Cheddar, we’re dedicated to making our dairy “Green by Nature”, using biogas, solar energy and water recycling.

Our Anaerobic Digestor plant breaks down organic by-products from our cheesemaking, farmyard manure and waste from other local suppliers into natural, green energy. We use this electricity to power our cheesemaking and put the rest back into the grid to power our boilers and homes in the local towns and villages, to decarbonise the energy network.

At Wyke Farms, our cheesemaking machines are designed to mirror the traditional methods passed down through generations, right down to our maturing rooms being kept at the exact same temperature as they were decades ago.

And while production has evolved since 1861, one thing never has: the original Clothier family recipe. This is why every block is rooted in generations of family tradition, and every slice is a true taste of Somerset.
