As well as making England’s Cheddar, we’re dedicated to making our dairy “Green by Nature”, using biogas, solar energy and water recycling. Our cheese and butter making runs on the self-generated renewable energy produced by our biogas plant, with the excess gas being supplied back into the grid.

Cheese grading is a vital part of what we do. Using a cheese iron, a special tool not unlike an apple corer, we take samples from the Cheddar at different times during the ageing process, grading them for flavour, aroma and texture, ensuring that each of our different cheeses reaches the best quality and have the distinctive characteristics that make our cheese unmistakably Wyke.

As fourth-generation cheesemakers, we honour our grandmother Ivy Clothier’s legacy with her original recipes and methods. Still using the secret family recipe, 100-year-old starter culture and maturing our Cheddar in wooden boxes with the same care and attention to detail, our cheese store is even specially designed to mimic the conditions of the original stone barn on the farm where the cheese was first stored. These natural and sustainable boxes have been reused for over fifty years, ensuring the perfect environment for our cheese to develop its unique, and unmistakably Wyke, flavour.

The sun does more than shine on our Somerset fields. Here at Wyke, we use solar energy wherever we can, with solar panels installed on the roofs of our buildings to help cool our milk, power our production facilities and charge the electric cars and vans we use around the farm.

We’re working towards generating 2MW of solar power at peak, helping us save over 1 million kg of CO₂ each year. It’s all part of our commitment to giving back more than we take, and looking after the land we’re lucky enough to call home.

With just the right amount of salt to bring out its smooth, clean flavour, we've made our Salted Butter the same way for over a century. Slow-churned with whey cream for extra creaminess, our butter needs no more than a generous slice of bread or a steaming crumpet.

A brilliant day at 🐄

It was lovely to be out and about in the heart of the countryside, meeting visitors, sharing our Cheddar and celebrating the farming community around us.

Here’s John Clothier standing outside Hill House Farm, the family home where his grandparents, Wilton Frank and Susan Clothier, first made cheese more than a century ago. In the very early days, the cheese used to be made in what is now the dining room before being taken upstairs to be matured, then loaded into a cart and taken to market. In 1906, John’s father, Tom William Clothier, was born here, in the cheese room itself!

John still lives at Hill House today, where the next Clothier generation continue to make Cheddar to the same family recipe, held safely under lock and key. John has dedicated his life to producing the finest Cheddar, and his knowledge and experience still guide us to this day. Thanks, John, for recreating this lovely picture.
