"KALAYAAN" (pronounced: kah-lah-yah-an) means freedom in Tagalog (Philippines' national language).
Why post about this word? Because today is The Philippines Independence Day. Indepence from who/ what? Spain. The Philippines was colonised by Spain for over 300 yrs and only gained its freedom in 1898. Because we were colonised for such a long time, some things got stuck such as the languange and food. One good example is Polvoron. Whilst the country has made its own version of Polvoron, we wouldn't have picked this one up without the Spanish influence.
