Meet Jonny

Jonny has been with Birchall Foodservice for almost four and a half years, and in those years, he has made a huge impression on so many people. Jonny has a vast knowledge of our product range and is a real problem solver - his initiative and quick thinking whilst on the phone to customers is so impressive. Jonny really is our resident 'right hand man', especially to his field sales partners!

Jonny was recently recognised for his hard work at the FWD Awards, where he won the Telesales Star award. Something we are extremely proud of him for, and he should be too! This is an amazing achievement, and he is so deserving of this recognition.

Outside of work, Jonny enjoys going for long walks in the fresh air, watching movies (his favourite is Back to the Future!) and he loves playing video games; his Xbox, PlayStation and PC set up is seriously impressive!

Mellow Yellow Ultimate Chilli Dressing – Spatchcock Chicken with Smashed Cucumbers. A bold, spicy twist on a classic roast, perfect for sharing!

Serves: 3–4
Prep: 15 mins (plus 2–3 hrs marinating)
Cook: 50–60 mins

Ingredients

Chicken:
1 medium whole chicken, spatchcocked
200ml Mellow Yellow Ultimate Chilli Dressing
3 tbsp soy sauce
4 garlic cloves, crushed
5cm fresh ginger, grated

Smashed Cucumbers:
2 large cucumbers
Pinch of salt
2–3 spring onions, sliced
1–2 red chillies, finely sliced
Black and white sesame seeds
2–3 tsp Mellow Yellow Ultimate Chilli Dressing

To Serve:
Extra Mellow Yellow Ultimate Chilli Dressing
Extra spring onions and chillies
Fresh coriander leaves

Method:
1. Spatchcock the chicken
Place the chicken breast-side down. Cut out the backbone, turn over and press firmly to flatten.

2. Marinate
Mix the Ultimate Chilli Dressing, soy sauce, garlic and ginger. Rub all over the chicken, cover and chill for 2–3 hours.

3. Cook
Preheat the air fryer to 180°C (or oven to 200°C/180°C fan). Cook skin-side up for 35–40 minutes, then turn and cook for 15–20 minutes more until golden and cooked through. Brush with extra dressing halfway through. The thickest part should reach 75°C and juices should run clear.

4. Make the cucumbers
Lightly smash the cucumbers and break into bite-sized pieces. Sprinkle with salt and leave for 10–15 minutes. Drain, then toss with the Ultimate Chilli Dressing, spring onions, chillies and sesame seeds.

5. Assemble
Pile the cucumbers onto a serving platter and place the chicken on top.

6. Serve
Drizzle over a little extra Ultimate Chilli Dressing and finish with spring onions, chillies and coriander. Serve whole for sharing or carve into portions.
