The Haze Awakens

Peach Lightsabre is in the keg and I’m buzzing with how this one has turned out.

Brewed with Chris and it’s a bostin’ Peach Lightsabre – 6.9% DDH NEIPA. Thick golden haze, glowing in the glass, and absolutely bursting with juicy hop aroma.

Straight out the FV I got a hint of peach, tropical fruit and that pillowy NEIPA mouthfeel you want, but it’s a little too bitter, which is expected and will mellow over the next week while it’s carbonating. The oats and Carapils have given it a lovely body, and head retention. The Verdant yeast is perfect for this kind of beer, and the hops are just leaping out of the glass.

It already looks and tastes fantastic, and like all good NEIPAs it’ll condition nicely in the keg over the next few days, the bitterness will soften slightly and everything will round out as it carbonates.

Huge shout to Chris for the brew day company and for coming up with the name.

Peach Lightsabre has landed… and it’s an absolute belter.

Chris popped round today for a brew day and to help knock out a NEIPA. Always better brewing with a mate, plenty of chat, and a few beers along the way.

This one’s Chris’s creation and he’s named it Peach Lightsabre. Big juicy NEIPA, packed with peachy goodness and all the hazy goodness you’d expect. If it turns out half as good as it smells, we’re onto a winner.

Good beer, good company, and Black Shed now smells like a tropical fruit shop.

Black As Your Hat made its first appearance at The Dog on Christmas Eve, 2015. I had a pint, my dad had a half, and by lunchtime the rest of the pub had finished the firkin - 72 pints gone. Not bad for a 7.2% beer, and one of the last pints I shared with my dad before he passed away a few months later.

Fast forward to now: Black Shed has finally got approval to sell alcohol. Thinking it might be time to bring Black As Your Hat back for Christmas. Colin from Outwoods Brewing, fancy having it on the bar at Christmas?

The brewhouse is almost up and running as a proper self-contained space, just need to get the fixed pipework in (so I can finally ditch the hoses) and find a stainless sink unit. I’ve even got a ‘cellar’ for kegs and CO2. The last element will be the flooring which will run through and link the brewery to the Fat Rabbit.

Looking forward to brewing again soon and having something fresh ready for Christmas.

Five O is kegged!
Couldn’t resist a sneaky one before carbing and conditioning…

This one’s a resinous, hoppy West Coast pale that’s come in at 6.9% – bold, bitter, with a heavy mouth feel - delicious. I’m bottling some of this for my mates 50th - hence the name.

Conditioning now, but it’s already tasting spot on.

This brew got me into a bit of trouble. I named it after Karl “Bomber” Harris, the brilliant BSB rider who tragically lost his life at the Isle of Man TT the previous year. During the Thwaites acquisition, Marston PLC’s lawyers suddenly landed a cease-and-desist on my desk, claiming customers might confuse it with their Lancaster Bomber. After some polite jousting, they let me sell off the remaining stock. The ironic twist? Not long after, Marston’s quietly rebranded their own beer in a style that looked suspiciously like mine.

It was pretty rare, you didn’t see it in many places. Felt like one of those drinks that only a few of us ever actually tried, and if you did, you definitely told the story after.

I reckon most people have never even heard of it.

Mash pH clocked in at 5.35pH, bang in the zone for maximising hop bite without harshness. OG hit 1.067, so with US-05 under pressure I’m expecting it to finish around 1.012–1.014, giving me a dry, ~7% West Coast IPA.

Mashed in with the best floor malt and a little crystal for colour and dextrin for head retention.

I treated the liquor with AMS, gypsum + DWB for ~Ca 135 / SO₄ 220 / Cl 55, giving a SO₄:Cl ≈ 4:1 – hoping for a crisp, snappy West Coast IPA and it’s all about the hops.

Centennial, Cascade, Amarillo
and Simcoe added throughout the boil and a hop stand.

I’ll use the same hops again for the dry hopping.

This floor-malted Maris Otter is about as good as it gets – and it’s going straight in the mash. West Coast IPA inbound. Brewing the best beer I can.
