Pecorino "Primo Sale" is a fresh cheese obtained from Tuma, which is sprinkled with salt and then left to mature for about a month. This is the second degree of maturation of pecorino. It comes with a color that is closer to white than to yellow, this is due to the short period of aging to which it has been subjected.
Semi-stagionato (meaning half-matured), this Pecorino has a lovely savoury, with a mild spicy hit of flavours with a familiar salinity on the palate.
Stagionato (meaning matured), as it ages, this pecorino loses its milky white color and takes on a hay-colored, ivory hue. The sweet, silken texture of the original cheese slowly gives way to a sharp, zesty flavor with a brittle texture.
