Racking day for our Pinot Noir 🍷
Today we transferred our 2025 Pinot Noir out of barrel after 10 months of maturation.
Made from a Burgundy clone of Pinot Noir, around 30% whole clusters were included in the fermentation to build complexity and structure. Fermentation lasted two weeks at 22–24°C, with two pump-overs daily and one punch-down per day towards the end of fermentation to achieve gentle extraction.
The wine matured in equal proportions in:
- First-fill François Frères French barrel
- First-fill Garbellotto barrel
- Second-fill Gamba barrel
- Stainless steel tank
Even at this early stage, the wine is already showing lovely purity and balance. A delicate pale ruby colour is accompanied by fresh red fruit notes, with hints of herbs, spice and forest floor beginning to emerge. The palate has fine, elegant tannins and vibrant acidity, providing a solid foundation for the wine as it continues to evolve.
Racking is always a satisfying milestone, but this is still just one chapter in the wine’s journey. We are looking forward to watching how it develops over the coming months before bottling.
