The 'Ber' months are officially here!
The season of soups, stews and hearty comfort meals is here, and what better way to celebrate than with one of our favourite soup recipes, roasted butternut squash and carrot ๐Ÿคค๐Ÿฒ

You'll need:
1 butternut squash - about 1kg, peeled and deseeded
2 medium carrots
2 tbsp olive oil
1 tbsp butter
2 onions - diced
1 garlic clove - thinly sliced
850ml hot vegetable stock
4 tbsp crรจme fraiche (plus more to serve)
(optional) 2 mild red chillies - deseeded and finely chopped

Method
1. Heat the oven to 200C/180C fan/gas 6.

2. Cut the squash and carrot into large cubes, about 4cm/1ยฝin across, then toss in a large roasting tin with 1 tbsp of the olive oil.

3. Roast for 30 mins, turning once during cooking, until soft.

4. While the butternut squash and carrots cook, melt the butter with the remaining 1 tbsp olive oil in a large saucepan, then add the onions, garlic clove and three-quarters of the chillies (if you used them!)

5. Cover and cook on a very low heat for 15-20 mins until the onions are completely soft.

6. Tip the butternut squash into the pan, add the stock and crรจme fraiche, then whizz with a stick blender until smooth. For a really silky soup, put the soup into a liquidiser and blitz it in batches.

7. Return to the pan, gently reheat, then season to taste. Serve the soup in bowls with swirls of crรจme fraiche and a scattering of the remaining chopped chilli.

If you're feeling a bit adventurous, you can even add savoury woodsy herbs like sage, thyme, and rosemary, as well as warm, sweet, or spicy notes like cinnamon, nutmeg, ginger, and cayenne

๐ŸŒฑ Produce News๐ŸŒฑ: Embracing the Wonky Veg!

Not all vegetables come out of the ground looking perfectly Instagram-worthyโ€”and that's especially true after a summer of extreme heat!

UK farmers are encouraging supermarkets and retailers to be more flexible about the appearance of fruit and vegetables, as this summer's heatwaves and challenging growing conditions have resulted in more unusually shaped produce. From wonky carrots and curly cucumbers to oddly shaped potatoes, perfectly good vegetables can sometimes be rejected simply because they don't meet strict cosmetic standards.

The result? More perfectly edible food going to waste.

Thankfully, there's a growing movement towards embracing "wonky veg" and recognising that shape and size don't determine taste or quality. After all, a crooked carrot still makes a perfectly delicious soup!

At Cambridge Fruit Company, we're proud to work with fresh produce every day, and we think there's something rather wonderful about fruit and vegetables looking like they actually grew in a field. ๐ŸŒฑ

We recently had the pleasure of attending the Form the Future CIC Summer Garden Party at Newnham College, celebrating 11 years of helping young people across Cambridgeshire discover opportunities, develop confidence and take their first steps into the world of work.

It was a wonderful afternoon and a great reminder of just how special the Cambridge business community can be. The event celebrated not only Form the Future's incredible achievements, but also the thousands of young people whose lives have been positively influenced by someone simply believing in their potential.

We were particularly inspired by talks from His Majestyโ€™s Lord Lieutenant of Cambridgeshire, Julie Spence and Anne Bailey, CEO & Co-founder at Form the Future C.I.C; and the conversations around resilience, encouragement and the influence we can have on others.

As a local business, we know that creating opportunities can make a real difference. A work experience placement, an introduction, an apprenticeship, a first jobโ€”or even just a bit of encouragementโ€”could be the moment that changes the direction of someone's future.

A huge congratulations to everyone at Form the Future for 11 fantastic years and for the work you continue to do supporting young people across our region. We're proud to be part of such a brilliant local business community. โค๏ธ
