ONE INTRODUCTION CAN PLANT A SEED 🌱
I have a small request for you today.
Think of one person outside Ukraine whom you would love to introduce to the story of BorschToGo.
Call them. Tell them about our mission. Send them our book Go Borsch! — today our story can already be read in five languages.
Why?
Because I believe movements grow this way.
One person.
One conversation.
One introduction.
One seed.
BorschToGo was born in Cambridge in 2022, at one of the most difficult moments in Ukraine’s modern history. Since then, our dream has been much bigger than introducing the world to Ukrainian food.
We want borsch to become a language of connection — a reason for people of different cultures, countries and beliefs to sit at the same table.
And now another dream is growing from this seed:
BORSCH AS ART
What if Ukrainian borsch entered the kitchens of some of the world’s most extraordinary chefs?
What if a chef could interpret borsch through their own culture, memories, ingredients and artistic language?
What if one Ukrainian dish became a canvas for a global conversation about identity, culture, art and peace?
Over the coming weeks, my journey will take me through New York, London, Cambridge and Turin.
And I would be deeply grateful for your introductions.
If you know a remarkable chef, restaurateur, curator or someone from the world of gastronomy in any of these cities — especially a Michelin-starred chef — please connect us.
I would love to sit at a table with them, bring our book, tell the story of BorschToGo and explore the possibility of creating Borsch as Art together.
There are extraordinary culinary communities along this route: London alone currently has 88 Michelin-starred restaurants, while Cambridge has both two-star Midsummer House and one-star Restaurant Twenty-Two. Turin, too, is part of Italy’s remarkable Michelin landscape.
I know that we are planting seeds.
We don’t know which introduction will become a friendship.
Which conversation will become a collaboration.
Which chef will create a new interpretation of Ukrainian borsch.
Or which table will carry our story further into the world.
But seeds only have a chance to grow when we plant them.
So today I am asking each of you for one small action:
