ONE INTRODUCTION CAN PLANT A SEED 🌱

I have a small request for you today.

Think of one person outside Ukraine whom you would love to introduce to the story of BorschToGo.

Call them. Tell them about our mission. Send them our book Go Borsch! — today our story can already be read in five languages.

Why?

Because I believe movements grow this way.

One person.
One conversation.
One introduction.
One seed.

BorschToGo was born in Cambridge in 2022, at one of the most difficult moments in Ukraine’s modern history. Since then, our dream has been much bigger than introducing the world to Ukrainian food.

We want borsch to become a language of connection — a reason for people of different cultures, countries and beliefs to sit at the same table.

And now another dream is growing from this seed:

BORSCH AS ART

What if Ukrainian borsch entered the kitchens of some of the world’s most extraordinary chefs?

What if a chef could interpret borsch through their own culture, memories, ingredients and artistic language?

What if one Ukrainian dish became a canvas for a global conversation about identity, culture, art and peace?

Over the coming weeks, my journey will take me through New York, London, Cambridge and Turin.

And I would be deeply grateful for your introductions.

If you know a remarkable chef, restaurateur, curator or someone from the world of gastronomy in any of these cities — especially a Michelin-starred chef — please connect us.

I would love to sit at a table with them, bring our book, tell the story of BorschToGo and explore the possibility of creating Borsch as Art together.

There are extraordinary culinary communities along this route: London alone currently has 88 Michelin-starred restaurants, while Cambridge has both two-star Midsummer House and one-star Restaurant Twenty-Two. Turin, too, is part of Italy’s remarkable Michelin landscape.

I know that we are planting seeds.

We don’t know which introduction will become a friendship.
Which conversation will become a collaboration.
Which chef will create a new interpretation of Ukrainian borsch.
Or which table will carry our story further into the world.

But seeds only have a chance to grow when we plant them.

So today I am asking each of you for one small action:

У кожному місті, куди приходить борщ, народжується своя особлива історія.

У Монако вона була про жіночу силу, творчість і тепло. Про хліб, спечений разом. Про борщ, який об’єднує. Про музику, мистецтво й щирі розмови, що залишаються в серці.

Саме за такими столами народжується довіра, з’являються нові ідеї та відчуття спільності. І ще раз переконуєшся: коли люди збираються разом із відкритим серцем, вони створюють набагато більше, ніж просто подію.

Вони створюють простір, у якому зростає душа.

🇺🇦🇪🇺 Borsch Circle with the European Union Team in Ukraine

Some conversations happen around meeting tables.

Others happen around a pot of borsch.

What we experienced together was more than a cooking workshop. It was an opportunity to connect through culture, stories, traditions, and shared experiences.

Every Borsch Circle reminds us that cultural diplomacy begins with people. When we cook together, we listen. When we share a meal, we discover common ground. When we learn about each other’s traditions, we build trust.

We are grateful to the European Union team in Ukraine for joining us on this journey and becoming part of our growing global community.

Together, we continue creating spaces where culture brings people closer and where a simple bowl of borsch becomes a bridge between countries, communities, and hearts. 💙💛

Becoming a Borsch Ambassador is about much more than learning how to cook borsch.

It is about inspiration. It is about joy. It is about bringing light where it is needed most. ❤️

Today, Ukrainian women are like pearls scattered across the world. Each carries her own story, her own strength, and her own journey. Yet each of them can become a messenger of Ukrainian culture, hospitality, and hope.

That is why we are preparing a social franchise model for BorschToGo, helping Ukrainian women create meaningful community experiences wherever they live.

We believe that food is the fastest way to make people happy. And at a time when culinary workshops are becoming increasingly popular around the world, our Borsch Circles have grown into something much bigger than cooking classes.

Sometimes we call them Dopamine Circles.

Because people begin to glow. They smile. They connect. They open their wings and rediscover their creative energy. Something special happens when food, culture, storytelling, and human connection come together.

Today, the team from the European Union in Ukraine cooked borsch, baked traditional Cossack bread rolls, made wishes, shared our Bread of Peace ritual, and received a special living postcard decorated with chamomile flowers and bread as a symbol of hope.

And do you know what inspired me the most?

Two people in today’s group had never cooked borsch before. Yet both of them said exactly the same thing:

“This is much easier than I expected. There is so much creativity in it. I would love to do it again.”

This is why we are now forming the first group for a women’s retreat for future Borsch Ambassadors.

Together we will learn how to host Borsch Circles, create meaningful experiences, facilitate groups, share Ukrainian culture, and support one another on this journey.

My dream is that every country in the world will have at least one Borsch Ambassador. Someone who can bring people together around a table, introduce them to Ukraine through taste, stories, and kindness, and create spaces where people feel seen, welcomed, and connected.

Я дякую кожному, хто говорить українською мовою.

І кожному українцю, який свідомо переходить на українську — теж дякую.
Бо це не просто слова.
Це теж труд душі.

Це повернення до себе.
До свого коріння.
До своєї культури.
До своєї ніжності.

І я дякую Богові за те, що я українка.
І за те, що моя рідна мова — така співоча, така жива, така м’яка.

Знаєте, я сама тільки під час війни почала говорити українською постійно.
І відчуваю, як навіть мій характер змінився.

Наче стає більше м’якості.
Більше тепла.
Більше світла всередині.

Бо мова формує людину.
А українська мова — вона про душу.

Бережімо її.
Говорімо нею.
Передаваймо її дітям.

Бо поки звучить українська мова — живе Україна 💙💛
