Vegetarian/ vegans/ flexitarians. After a lifetime of being vegetarian (thank you, parents, for never giving me access to baco
n), I decided to make the jump in February to veganism.I made my decision for a range of reasons, but I won’t preach about them here (although I quietly encourage you to do some reading yourself, because I think it’s important – regardless of what kind of diet you follow – to know where your food comes from). If you keep up with the blog, you will no doubt get updates about how this exciting new part of my life is shaping up. But onto the (ahem) meatier stuff – I think the best way to get people eating more vegan food is to illustrate how good it is, and believe me, I eat very nice things. Food can be delicious, nutritious, and even luxurious without any animal products at all, and I’m going to devote my energies to showing you just this. In many ways, it’s lovely that I get in-college accommodation provided for all four years of my degree. I don’t have to worry about landlords and electricity bills, for one thing. The downside to such conveniences is that you’re stuck with minimal cooking facilities. This year, I have two hobs, which take either thirty minutes to gently fry onions, or thirty seconds to burn them, depending on what mood they’re in. And that’s a marked improvement on last year, when I had only a microwave to live on…. Most of my recipes (especially those I post during term-time) will take into consideration that not everyone has six hobs, two ovens, a pressure cooker and hours of time and ingredients at their disposal. This pretty much contradicts everything else I’ve said, doesn’t it? But seriously, anyone can profit from what I’m writing about here. Working late most days of the week? Many of my recipes are quick to cook or at least easy to prepare in advance. Want to cut down on unhealthy stuff? I can’t deny that a vegan diet (even one like mine, which is filled with little indulgences… chocolate pudding, anyone?) is generally healthier de facto, because you replace more fattening foods like cheese with highly nutritious ones like avocado. Want to cut down on meat/ animal products for environmental reasons? No animal products are used in these recipes, so you’ve come to the right place. Simply want to eat tasty food? You’ve come to the right place. Whether you’re a student or a vegan, both or neither, I bet you want to eat nice food, and that’s what Cogito, ergo yum is all about.
