'Theo and Zoe's Vegetarian Carbonara' a funny story about this dish... so one evening one of my regulars (a couple) ordered a Carbonara, knowing they were vegetarian I thought this a bit odd, so I scan to the notes and they've asked me to make it a vegetarian.
Slightly stumped I called them and asked them how I could do that 🧐 To which they told me that the chef at 'The Shard' in London had made them one... As anyone that knows me will tell you, I'm a very competitive person and this sounded like a challenge... one I gladly accepted, and this was the result. So and Theo this one's for you 😉
