Our chicken main from a recent event. We try to utilise the whole animal in our dishes and pair with what’s in season at that specific time. Chicken breast roasted on the crown, deep fried buttermilk drumstick with a wild garlic mayo, crispy thigh, butter poached leek, pomme puree and truffle cream sauce made from the roasted chicken bones.
