Ciao, my name is Francesco born in Puglia (Italy) and matured in Wales, after living many years away from home, here in Wales that I'm so thankful, I am now a mature Dragon and not a Parmigiano anymore

It all started in 1982, I was three years old, in Puglia, Castellaneta, when I had my first Panzerotto bite, I don't remember, but my mum always reminds me, she warned me to wait before bite, the w

arning come into my ear and come out from the other ear and burned my lip. Wait before you bite, and keep away from your clothes I have learned when I eat Panzerotto

From young age I have a passion about food, to cook, thanks to Nonna ( my grandmother cooks Panzerotto to all in Paradise right now) and mamma, to taught me some great life skills and how to make Panzerotto and more Apulian food, that I am passionate to make and share with you all. I remember when I was seven years old, walking back from school, arriving home, my sister working sewing shirts down the garage, my father a police man, my mum work in agriculture camps, I was the first to arrive home and cook for everyone, I had not choice, the passion to cook come, to found me, and I want share it with you, my passion for Apulian food, the so called bread and basket of Italy. I hope I can bring a new Italian food experience from Puglia for your palate, and yes! My menu at the moment includes Panzerotti, Pasticiotto Leccese to enjoy with our coffee, Focacce and more to come. Follow me on my socials to keep you update
