Courgette season is peaking! 💚
Call it zucchini, courgette, or κολοκυθάκια (kolokithakia) - it’s one of the most beautiful, affordable, and versatile vegetables to cook with.
I’m sharing my super easy stuffed courgette recipe made with just rice, courgette, salt and pepper, yogurt, and eggs. Simple ingredients, comforting flavors, and the perfect way to celebrate the season.

Simple Stuffed Courgettes with Yogurt & Cheddar
Ingredients
3 large courgettes
Courgette flesh
Up to 6 tbsp rice
2 tbsp olive oil
Salt & black pepper
½ cup water
6 tbsp Greek yogurt
1 egg + 1 egg yolk
6 slices cheddar, cubed
1 tbsp plain flour
Method
Preheat the oven to 180–200°C. Halve the courgettes lengthways, scoop out the flesh, lightly salt the shells, brush the baking tray with olive oil and bake for 10 minutes.
Cook the courgette flesh in olive oil, add the rice, season well, pour in the water, and simmer for about 15 minutes.
Mix together the yogurt, egg, egg yolk, flour, cheddar, salt, and pepper (season to taste- o recommend a LOT OF PEPPER 1/4 tsp at least).
Fill the courgettes with the rice mixture, spoon over the yogurt topping evenly, add a little water to the baking tray, and bake for 30 minutes until golden. Cover for the first 20 and remove cover for last 10.
Let them rest for 10–15 minutes before serving.
