Last night’s supper was inspired by Thomasina Miers. True to her instruction I did, indeed, play around with the ingredients. I decided to use braising steak and cooked it in the bottom oven of my Everhot, at 100, for about 7 hours (after starting it off on the hotplate).
I made flour tortillas, which are ridiculously easy. I cooked them directly on the hotplate but they can easily be done in a pan on the hob of a conventional cooker.
I also made a guacamole, but omitted to take a picture 😬

I did this vegetable dish as an accompaniment to chicken fillets but it probably makes for a nice veggie lunch on its own, perhaps with some lovely bread.
It’s onions, peppers, courgettes and tomatoes roasted in rapeseed oil and garlic purée, then passata, borlotti beans and gnocchi added. I heated it through on the hotplate, added some seasoning and fresh basil, then put the lid on the pan and returned it to the oven for a few minutes while I seared some asparagus on the hotplate. Then put the asparagus on top for a colourful and tasty dish.

Greek inspired Saturday supper. Pork fillet, souvlaki style. It should really be served with pitta but I didn’t have time to make any so got a home baked baguette out of the freezer and warmed it in the top oven of my Everhot, wrapped in foil.
Served with homemade tzatziki, and a salad of lettuce, rocket, avocado and pomegranate seeds.

I made a marinade of olive oil, dried oregano, dried thyme, paprika, garlic purée and lemon juice and put the pieces of pork in, mid-afternoon. Then covered the bowl and left it in the fridge for about three hours.

I cooked it directly on the hotplate of my Everhot.

A really delicious and easy salad - tinned lentils, cucumber, tomatoes, red onion, pepper, feta, olive oil, lemon juice, salt & black pepper.

I made this for lunch to go with jacket potatoes and spicy sausages.
