Scottish Saithe with vibrant, tomato, chilli, garlic sauce and fresh Gnocchi.

What you need:
🐟 Saithe/Coley or an alternative Scottish whitefish
🥔 120g potato gnocchi
🧅 1 small onion (finely chopped)
🧄 1 clove garlic (finely chopped)
🌶️ 1 mild fresh red chilli thinly sliced.
🥫 200ml tomato passata
🍅 200-300g of mixed size vine tomatoes, cut into rustic equal chunks
🍷 1 tbs red wine vinegar/red wine
💧 1 tbsp balsamic vinegar, lemon juice, a little water
🫒 2 tbs EV olive oil
🧂 Sea salt, freshly ground black pepper
🍃 2 tsp fresh chopped parsley
💚 ½ tsp dried oregano
🍋 1/4 fresh lemon to squeeze and zest.

Method:
To prepare the tomato Sauce

1. Gently fry the chopped onion and garlic in a tablespoon of good extra virgin olive oil for about 5 minutes until soft.
2. Add the red wine and reduce until barely any liquid is left and now follow this with the balsamic vinegar.
3. Add the chopped tomato, and cook for 5-10mins until soft, add the passata, chilli, oregano and half of the parsley, reduce the heat to simmer and cook until thickened, season to taste, leave on low heat.
4. place a large pan of well salted water on the hob, ready for the gnocchi

To cook the fish:
1. Preheat your oven to its maximum temperature, and a frying pan to medium heat with the remaining olive oil.
2. Rub a little oil on the fish and salt, place in the pan skin side down and fry on medium heat for 5 minutes, or until the cook line is 1/3rd to halfway up the flesh.
3. Remove from the pan and place in the oven for 3-5 minutes, or until it loses its opacity.
4. Meanwhile plaice your gnocchi in the boiling water, and cook until it floats, usually 3-5 minutes, add a few tablespoons of the cooking water to the sauce, then drain the gnocchi. Ladle over the sauce, place the fish on top, removing the skin and garnish with the remaining parsley and a squeeze of lemon and season to taste.

When cooked right, it’s beautifully tender with a light, delicate flavour, but overcook it and it goes a bit rubbery.

Serving idea 💡
Keep it simple - lightly fried with a squeeze of lemon, or toss it in garlic, chilli, and olive oil for something with a bit of a kick.

Lemon isn’t just for serving 🍋

A squeeze makes all the difference. Adding lemon during cooking (not just at the end) helps balance flavour and adds a contrasting sharpness to the natural oils in the fish.

Take pan-fried cod, for example: After flipping your fillet, add a squeeze of fresh lemon juice to the pan along with a k**b of butter. As it bubbles, spoon it over the fish, this not only brightens the flavour but creates a light, silky sauce that soaks right in.
