A few very busy days last week of cooking for a Keswick Ministries Bible Workshop at the Pencil Factory. Lunch, dinner and lunch for 40 😊🍽

On the Menu:

Lunch 1: Soups, sandwiches, salad, cakes and traybakes.

Evening meal: Roast chicken or pork, roast and mashed potatoes, roast and steamed veg, Yorkshire puds, gravy and applesauce. Followed by apple crumble/ sticky toffee pudding/ pavlova

Lunch 2: Frittata, cold meats, salads and bread, cakes and traybakes

Lunch buffet for Enterprise Cumbria at the Pencil Factory - a vast selection of sandwiches, fritatta, savoury pastries, mini sweet treats, fresh fruit and veg. Healthy AND tasty 😍

Last weekend, I spent a busy but brilliant few days cooking for our church youth group's annual weekend away. I didn't see much of the scenery, but it was lovely. Saw a lot more of the kitchen! 😆 what a privilege to feed a lovely bunch of hungry and appreciative teenagers ❤️

The Chocolateiest birthday cake 🍫✨️
An incredibly chocolatey cake filled with chocolate cream cheese frosting, topped with a dark chocolate ganache and piled up with some chocolate sweet faves. Yum!
And as a bonus...a special chocolatey cupcake for a guest with extra dietary needs...because nobody misses out on cake if I can help it! ❤️

I got up bright and early in the midst of a beautiful sunrise to put the finishing touches to this mega selection of meats, salads and freshly baked sourdough bread.

On the menu:

Roast topside of beef
Sweet and sour pork meatballs
Chicken, mushroom and spinach quiche
Roast baby potato salad with sour cream and bacon
Chicken caesar salad
Greek salad
Sweet potato, feta, balsamic and rocket salad
Cabbage, carrot and apple slaw
Fresh Sourdough and butter

Nearly 200 attendees enjoyed a selection of finger sandwiches, frittata, savoury pastries, fresh fruit and sweet treats ✨️

On the menu:

Finger sandwiches:
Roast beef and horseradish
Coronation chicken
Ham
Brie, apple and cranberry
Chickpea Savoury
Sweet potato, cashew cheese and spinach.

Frittata: bacon and cheddar; roasted vegetable

Pastries: caramelised onion and fig; Fresh pesto twists

Vanilla cake, apple gently cooked with a bit of cinnamon sugar, cinnamon buttercream and a crisp oaty crumble topping. Dairy and gluten free 😋

These beauties were a 30th birthday treat - but in my opinion, any day is a good day for one of these! 🥰

Lunch delivery! A selection of savoury treats for a family celebrating the Dedication of their one year old daughter. Mini open sandwich skewers, fritatta, pastries and salads - all packed up (with the exception of the salads) in these lovely covered wooden trays (I bought bigger ones!) They stacked up perfectly in a waiting car boot and zoomed off to the lunch venue. Easy peesy!

On the menu:

Mini open sandwich skewers:
-Cheddar, tomato and pickle
-Hummus, roasted veg and balsamic drizzle
-Ham and cucumber
-Chicken and bacon

Leek, spinach and feta frittata
Sweet potato and chorizo frittata
Honey, mustard and rosemary sausage rolls
