Warm up with a bowl of this creamy and rich Crab Bisque, perfect for any seafood lover!
Ingredients:
1 pound fresh crab meat
4 tablespoons unsalted butter
1 medium onion, finely chopped
2 celery stalks, finely chopped
2 garlic cloves, minced
1/4 cup all-purpose flour
4 cups seafood or chicken broth
1 cup heavy cream
1/2 cup dry white wine
2 tablespoons tomato paste
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional, for extra heat)
Salt and pepper to taste
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives
Lemon wedges, for serving
Instructions:
Prepare the Aromatics:
In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. SautΓ© until the vegetables are tender and translucent, about 5-7 minutes.
Create the Base:
Stir in the flour and cook for another 2 minutes, stirring constantly, until the flour is well incorporated.
Add Liquids and Spices:
Gradually whisk in the seafood or chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes, allowing the flavors to meld.
Incorporate Tomato and Cream:
Add the heavy cream, white wine, tomato paste, paprika, and cayenne pepper (if using). Simmer for another 10 minutes, stirring occasionally.
Blend and Season:
Using an immersion blender, blend the bisque until smooth and creamy. Season with salt and pepper to taste.
Add Crab Meat:
Gently fold in the fresh crab meat and let it heat through for 5 minutes. Be careful not to break up the crab too much.
Serve:
Ladle the bisque into bowls and garnish with chopped parsley and chives. Serve with lemon wedges on the side.
