FED IN 5: 5 minutes - 5 ingredients!

Episode 1: Veggie Bolognese w Crispy Gnocchi (serves 2)
INGREDIENTS:
500g gnocchi
200g vegetarian mince (I used straight from frozen)
1 jar of any tomato based pasta sauce (I used tomato & mascarpone)
1 good handful of grated cheese
A good drizzle of olive oil to finish (I used )
METHOD:
Get 2 frying pans really hot with a drizzle of oil or butter and add the mince to one and the gnocchi to the other.
Fry the mince for a couple of minutes and then add the pasta sauce, top up the empty jar with a little water and add that too.
Meanwhile keep shuffling the gnocchi around so it browns and goes crispy on all sides.
Once the bolognese is piping hot, spoon the mixture into bowls and sprinkle over the cheese - then top with the gnocchi and finish with a drizzle of olive oil. Season if you wish and that’s it!
Serve!

Egg Salad Wraps:

Ingredients:
2 British Lion eggs
1 pitta bread
1 handle of diced cornichons (plus a little of the pickling liquid)
2 heaped tbsp of mayonnaise
1 tsp Dijon mustard

METHOD:
Start by placing a saucepan on the hob and filling it with kettle boiled water. Once the water is simmering, slowly lower the eggs into the water using a spoon and leave to cook for 10 minutes.
Then remove them and place in a bowl of cold water until they are cool enough to peel (use ice cubes to speed up the process if you’re in a rush).
Peel the eggs and roughly chop them into a bowl. Add the mayonnaise, Dijon, cornichones and 1 tsp of the pickling liquid. Mix thoroughly.
Then grab your pitta bread and either toast it or pop it in the air fryer for 5 minutes. Grab a pair of scissors and slice it in half, stuff your egg mixture inside and that’s it!
Serve!

Warm Halloumi & Watermelon Salad with Hot Honey
INGREDIENTS
100g of halloumi cut into cubes (I used )
2 good handfuls of watermelon cut into cubes
2 good handfuls of sliced cucumber
A few fresh basil leaves
A good drizzle of hot honey (I used )
METHOD:
Add the halloumi to a medium heat frying pan with a little oil and fry until golden and starting to get crispy at the edges.
To a plate/bowl, assemble the watermelon & cucumber, sprinkle the halloumi and basil leaves across the top.
Drizzle over as much honey as you like.
I also used a drizzle of olive oil and a pinch of seasoning.
And that’s it!
Serve!
You know when you make something so delicious that you know you’re going to keep making it until you’re actually sick of it? Well I have a feeling that’s what’s going to happen here 🙈😂

Green Goddess Chicken Salad (but make it beige 😂👍)
INGREDIENTS:
2 handfuls of any salad leaves (I just had a fancy radicchio I ordered from 😇)
2 chicken breasts
1 cup of orzo
100g feta crumbled
A good glug of green goddess dressing (I used one)
METHOD:
Season the chicken breasts and add them to the airfryer for 15 minutes, pausing to turn them over halfway through.
Boil the orzo according to packet instructions, then drain and add a little olive oil to stop it from sticking together.
Roughly chop the chicken breasts and add them to a large bowl along with the salad, feta, orzo and dressing.
Tumble together and season if you wish.
That’s it!
Serve!

Sausage & Red Onion Gnocchi Pie đŸ„§
INGREDIENTS: (serves 1)
2 sausages sliced -
Half a jar of Passata or pasta sauce (approx 150g) I used
1 red onion roughly chopped
2 handfuls of gnocchi - or enough to cover it
1 good handful of grated cheese
METHOD:
Turn the oven to 180 degrees c fan
Add the sausages and red onion to an ovenproof dish.
Cover with the pasta sauce/passata and mix thoroughly
Cover with the gnocchi and top with the cheese.
Place in the oven for 30 minutes.
Then remove and that’s it!
Serve!
This is really easy to size up or keep as a single serve option depending on how many you’re feeding - I just made it for one (for Harry) because I only had 2 sausages left!

Spiced Bean Shakshuka
AD | I’m delighted to have teamed up with again to bring you this cosy Smokey bean Shakshuka with delicious jammy British Lion eggs. If the eggs you buy have got the British lion stamp on, they’re perfectly safe to have runny or raw 🍳
INGREDIENTS:
4 British Lion eggs
500g Passata
2 sliced peppers
2 tins drained cannellini beans
1 tbsp smoked paprika
METHOD:
To a large lidded saucepan, add the peppers and sauté them in a little oil for a few minutes.
Then add the paprika and mix, then add the passata and the beans plus refill one of the bean tins with water and add that too.
Turn down the heat and simmer until the mixture has thickened (approximately 10 minutes). Check for seasoning and add some if you wish.
Then make 4 wells and carefully crack the eggs into them.
Then add the lid and turn the heat down to low. Cook until the whites have cooked and then turn off the heat.
Butter some toast (if you wish) and serve!

No Cook Cooking Episode 7
Salmon & Wild Rice Bowl
INGREDIENTS:
2 pre cooked salmon fillets (I used piri piri flavour)
1 sachet of wild rice (I used )
1 handful of chopped cherry tomatoes
1 small red onion finely diced
A good glug of green goddess dressing (I used the one, really nice)
METHOD:
Heat the rice according to packet instructions the add it to a large bowl.
Add the tomatoes and onion, then flake the salmon in. Pour over your dressing and tumble together.
That’s it!
Serve!
I had mine with a toasted pitta bread and a bunch of dill and it was delicious. Seriously filling let me tell you 😅

No Cook Cooking Episode 5
Spicy Salmon Chipotle Grain Bowl (serves 2)
INGREDIENTS:
2 sweet chilli pre cooked salmon fillets
1 pouch of burrito super grains
1 cup of plain yoghurt
1 heaped tsp of chipotle paste
A good handful of any leaves
(Optional, a few slices of red onion)
METHOD:
Combine the yoghurt and chipotle paste in a bowl and mix until combined.
Microwave the grains according to packet instructions.
Add the dressing to a large bowl of plate. Top with the leaves, grains and onions (if you want those).
Flake the salmon across the top and that’s it!
Enjoy!
This genuinely took 5 minutes to make, it’s super healthy and stored perfectly for lunch the next day too!

No Cook Cooking - Episode 4
Spicy Bean Slaw Salad đŸ„—
INGREDIENTS:
1 packet of undressed coleslaw mix
A good drizzle of your favourite dressing (I’m using the chipotle ranch dressing)
Any beans you like - I used the Smokey black turtle beans
A handful of crumbled feta
A handful of pomegranate seeds
METHOD:
If you want the beans warm, feel free to heat them through (I microwaved mine).
Then add everything to a large bowl and mix. Season to taste.
I ate half today on a bed of leaves with a little extra dressing and the other half I might have tomorrow in a sandwich đŸ€·â€â™€ïž
A bowl of this easily counts as your 5 a day and it’s surprisingly filling!

Fluffy Blueberry & Vanilla Pancakes đŸ„ž
INGREDIENTS:
1 cup of blueberries
1 cup of self raising flour
1 cup of any milk
1 egg
1 tsp vanilla extract
METHOD:
Add all the ingredients to a large bowl and whisk until smooth.
Add dessert spoonfuls of the batter to a hot frying pan with a little oil and fry until golden on both sides.
Stack them up and top them however you like!
That’s it!
Serve!
If you are egg free - you can swap the egg for a tbsp of chia seeds and leave the batter to stand for 5 minutes before frying.
