Herbed Lentil Salad with Pomegranate & Pistachio

Vibrant, nutritious, and bursting with flavour. This beautiful salad brings together earthy lentils, jewel like pomegranate seeds, and creamy feta, all finished with our award winning Raspberry and Wholegrain Mustard Dressing.

Ingredients
400g mixed lentils (cooked)
100g pomegranate seeds
80g roasted pistachios, roughly chopped
150g feta cheese, crumbled
Large handful fresh parsley
Large handful fresh mint
1 small red onion, finely diced
4 tbsp Cotswold Gold Raspberry and Wholegrain Mustard Dressing
Salt and pepper to taste

Simply combine the lentils, pomegranate, pistachios, feta, herbs and onion. Drizzle generously with our Raspberry and Wholegrain Mustard Dressing and toss gently. Season to taste and serve at room temperature.

Serves 4 as a side, 2 as a main.
