Fish
I love cooking fish and in my opinion, it’s much harder to cook to perfection than meat.

Italian/French
I love to eat both cuisines, I couldn’t pick one.

Summer/Winter
You may remember yesterday I said winter was my favourite time for seasonal ingredients, but of course there’s always the pull from the variety you get in the summer!

Coffee
No brainer. It’s the only way to survive long days in the kitchen….and parenting!

Main
Can often pass when it comes to ordering dessert. Doesn’t mean i’m no good at creating desserts though.

Rugby
A random one to end with, but incase you’re new around here rugby plays a huge part in my life. These days not finding the day after games feeling like I’ve been hit by a bus that fun but the camaraderie of being part of a team is a feeling that’s hard to replicate.

Best time of year for seasonal ingredients?

For me it’s winter. As a chef it makes you get more creative to use the ingredients in different ways.

Worst vegetable?
(Need no convincing on this one!)

Sprouts! So bad they haven’t even created an emoji for them!

Favourite style of knives?

Lighter than other styles and easy to maintain profile. And…they’re beautiful!

Style of food you could eat every day?

Asian.

It’s so broad - sushi / Indian curry / ramen / pad Thai / pho / kimchi / Thai curries / rendang / kebab / dhal / reaching all the way to flatbreads and hummus, to name just a few!

Creating great food is actually simple when you understand flavour.

One thing I’ve learned over the years as a chef is that not everything needs to be fancy. You don’t need gels, foams, or complicated techniques to make incredible food.

Cook simple ingredients well. Give them care, attention, and respect. Focus on building flavour, and you’ll rarely go wrong.

One of the biggest things I see missing these days is seasoning. Learn how to season properly. Taste as you cook. Salt, acid, herbs, spices—used at the right time, they can completely transform a dish.

Food isn’t about showing off. It’s about bringing people together, creating memories, and sharing moments around the table.

Keep it simple. Cook with confidence. Cook with flavour.
